

Something like Localmodone in this example. Then rename the all-numbers folder name in the \\mod\ folder.

Then you can create a new folder at \\Documents\Paradox Interactive\Crusader Kings III\mod\ and then copy over the mod's folder from the Workshop location above. The folders are numbered by the Steam assigned Workshop mod ID number but poking inside each folder can quickly tell you which mod it usually is. Steam downloads all mod files for CK3 in \\Steam\steamapps\workshop\content\1158310\. You can do it manually while the version of the mod that you wish to preserve is installed on your computer. I am fairly certain that only the mod's author can roll back the version of the mod globally for everyone on the Workshop and unlike reverting the game itself to a previous patch in Steam there is no such option for mods for the user.
